Roberto Bolano’s Brussels sprouts recipe
Of the many digressions in Roberto Bolano’s magnum opus 2666, there’s space for health tips from a seer who asks “people with high blood pressure [to] give up eggs and cheese and white bread”. There’s also space for recipe if you love literary food. In addition to Hemingway’s Hamburger recipe that we posted recently, here’s Barry Seaman, a Black Panther member-turned-cookbook writer, with his recipe for Brussels Sprouts with Lemon.
Ingredients
2 pounds of Brussels sprouts
Juice and zest of 1 lemon,
1 onion
1 sprig of parsley
3 tablespoons of butter
3 black pepper
and salt.
How to make
1. Clean sprouts well and remove outer leaves. Finely chop onion and parsley.
2. In a pot of salted boiling water, cook sprouts for twenty minutes, or until tender. Then drain well and set aside.
3. Melt butter in frying pan and lightly sauté onion, add zest and juice of lemon and salt and pepper to taste.
4. Add Brussels sprouts, toss with sauce, reheat for a few minutes, sprinkle with parsley, and serve with lemon wedges on the side. So good you’ll be licking your fingers, said Seaman. No cholesterol, good for the liver, good for the blood pressure, very healthy.
